Curator's Notes
These cutting boards are part of the award winning cookware line ‘Ambai’, designed by Makoto Koizumi. They are made from hinoki cypress, a type of wood noted for its antimicrobial properties and pleasant natural fragrance. The wood is soft on knife blades as it has an inherent elasticity. We love that the boards appear thin and delicate yet are incredibly durable, especially with the added cherry wood inserts at the corners that prevent warping. They occupy very little storage space and are also lightweight, making them easy to handle during intensive meal preparations.
